[Màiri] Cuir ris an sin cuideachd rùsg, tha, aon oraindsear, gun a bhith ro mhòr, oraindsear meadhanach.

[Màiri] Ceithir uighean agus feumaidh na h-uighean a dhol a-staigh, aon ugh agus ga bhualadh.

[Màiri] Ma tha an ùine agaibh tha e an-còmhnaidh nas fheàrr na h-uighean a chur ann aon às dèidh aoin airson dèanamh cinnteach gu bheil iad air an deagh mheasgachadh an lùib an ime.

[Màiri] Tha mi a’ cur an dà chèic ri chèile le ìm uachdarach a tha thu a’ dèanamh le ìm bog, siùcar pùdar agus sgrìobadh de rùsg oraindseir.

[Màiri] Seo an icing sugar agus an sùgh. Dòrtaidh sinn sin air bàrr na cèic ach thig e, tha còir gun tig e sìos na taobhan cuideachd.

[Màiri] Sin a-nis, agus dìreach rud beag oraindseir airson ’s gum bi e a’ coimhead nas snoige.

Mairi’s orange cake

English Beurla

[Mairi] Again very simple. Eight ounces of butter, eight ounces of caster sugar beaten together just until they are mixed and is very light.

[Mairi] Add to that too the peel of an orange that is not too big, an average-sized orange.

[Mairi] Four eggs and the eggs must go in ... one egg and ... beat it.

[Mairi] If you have the time it is always better to put the eggs in one after another to make sure that they are well mixed with the butter.

[Mairi] Now, into this I am going to put eight ounces of self-raising flour. This is just so easy to do. It’s always better to shake the flour through a sieve. Air will get into it and your cake will be lighter.

[Mairi] Then I mix the flour in gently.

[Mairi] There we go. Now dividing it between two tins. And it is seven inch wide dishes that I have .

[Mairi] And this will now go into the oven at a heat of, say, about one hundred and eighty. It will take about twenty minutes. Into the oven now.

[Mairi] Whilst the cakes are in the oven I will make a sugary coating that will be poured on the top. Two big spoons of orange juice. Now this is proper juice from oranges themselves. Not something that you buy in the shop. I think that this has a better taste. And seven ounces of icing sugar.

[Mairi] You will now see here the icing and the juice have come together and it must be very wet so that it pours down the sides of the cake.

[Mairi] I am putting the two cakes together with butter icing that you make with soft butter, icing sugar and orange rind.

[Mairi] Here is the icing sugar and the juice. Pouring that on top of the cake but it will come ... it should come down the sides as well.

[Mairi] There now, and just a wee bit of orange so that it looks nicer.
