Seonag Smith’s goat’s cheese and watercress tart

[Gregor] I’m in Benbecula learning how to make a tart that isn’t at all sweet that most friends will enjoy.

[Gregor] OK, what’s going into the shortcrust?

[Seonag] Well, just eight ounces of flour – plain flour – and two ounces of lard, and two ounces of butter.

[Seonag] So, that’s ready now… like breadcrumbs as you can see, so ready to add the egg. So, I don’t know if I’ll need the whole egg.

[Seonag] I wonder if I’ll need a drop or two of water.

[Seonag] And just bringing it together with your hands. Until it comes together as a ball.

[Seonag] I’m going to put it to one side for a second while I’m getting what I’m going to put inside it ready.

[Gregor] Seonag puts the dough in a cold place for half an hour. And at the same time, she fries onion on the cooker until it softens.

[Gregor] So our pastry’s ready now.

[Seonag] Our pastry’s been settling. So, I’ll just put a little bit of… of flour on the table in case it sticks. It isn’t so easy to roll out, but just a little patience and take your time with it and it’ll come together no problem. As they say in English, “pound coin thickness”. That’s what they want in every recipe.

[Seonag] Now, I’m going to grease this because it’s glass and it’s not as good as a tin one, because the butter is liable to burn and it’s an it’ll make it… it won’t burn but it’ll make it brown, the base of the pastry.

[Seonag] Now, we’re going to try to this, have I got space, without breaking it too much.

[Gregor] Very short pastry, isn’t it.

[Seonag] Yes. Really short. But if there’s any holes just path them up and… that means the filing won’t come out.

[Gregor] Now, this is going in the oven, how long?

[Seonag] Only about ten minutes, or a time like that, just until it starts to cook, but I’m going to put parchment paper on it first. And you can put baking beans in if you have them, but if not rice or anything else you have like that.

[Gregor] Now, what temperature is the oven at?

[Seonag] About two-hundred. So we’ll put it in the oven now.

[Seonag] So I’m just going to beat the eggs.

[Gregor] So you’ve got five eggs in the bowl now, and just a little milk, just…

[Seonag] Only about two large spoons in, aye like that. And you must keep your eye on the watercress as well because some of them, their stalks are quite large and you don’t want that. So just pick them off. I just need to cut them a little.

[Seonag] You have to lift this out and put the onion on. And then the watercress.

[Gregor] And will you just add the cheese in mouthfuls.

[Seonag] Yes, exactly. And you want a good amount of the cheese so that people pick up the flavour. I’ll see what I have to do.

[Gregor] How long will they go in the oven now?

[Seonag] As good as quarter of an hour or thereabouts?

[Seonag] You’re hungry!

[Gregor] That is so good.

[Seonag] Yes, really good. Isn’t that good.

[Seonag] Mmm, it’s really good. I’m getting the taste of the onion and everything else. Mmm hmm. It worked well.

[Gregor] It did.
