Shona Masson's blondies

[Griogair] Shona, what are you going to bake today?

[Shona Masson] Well, today I am going to try blondies, malted blondies, I am going to start with the chocolate, and I have water here, hot water and I am just going to melt it.

 [Gregor] What is this white chocolate, what is this?

[Shona Masson] That's 100 grams and with that I am adding 125 grams of butter, so that goes in too, and they are is awfully sweet.

[Shona Masson] I think that it is it ready, everything is melted now. I am just taking it from the pan and just leaving it for a few minutes so that it won't be so hot when I put the other things in.

[Gregor] This has, you'd say, cooled a bit. There is 225 grams of brown sugar, soft brown sugar and that goes in. And, also ...

[Gregor] There is plenty sugar there.

[Shona Masson] Yes. But also three eggs, beaten. That goes in too. And... there is a teaspoon of vanilla goes in too. And I am going to mix it together.

[Shona Masson] So, I think that's come together now. So, Gregor, will you give me that sieve to begin?

[Gregor] Here now.

[Shona Masson] I am going to put flour and things in . So, I'll out flour in to begin, so If you could give that to me. Thanks. So, here, there's 100, well, in this bowl, there's 100 grams of plain flour and 50 grams of self-raising flour together. So that goes in.

[Shona Masson] And the malted powder as it was too. I have four tablespoons coming in here, that just brings extra flavour to... the blondies. Without putting too much ... without beating too much, really. That's 60 grams, of just normal chocolate which has been cut.

[Shona Masson] And then, the last thing, that's those wee chocolate balls

[Gregor]... that are here.

[Shona Masson] And I am going to put them in. Some of them have been cut, some of them have been left whole as it was. That gives a bit of texture and wee crunch really actually to the cakes.

[Gregor] This will be good, good appearance and the tin, everything goes in here.

[Shona Masson] Yes, yeah so, just a wee normal tin or... I think it's about something like 20 centimetres or about that size.

[Shona Masson] I just put it in... to the tray.

 [Gregor] It goes in the oven?

[Shona Masson] It does, it does. The oven is at ... well, it's a fan oven that I have and I think it's at 150 degrees as it was. And that goes in there for maybe 150 degrees as it was. And it goes in there for maybe 35, or 40 minutes or about that.

[Gregor] Shona waits until the blondies are cold, then sprays them with melted white chocolate and crushed chocolate balls.

[Gregor] Amazing!

[Shona Masson] You have very happy eyes!

[Gregor] The flavour of the malt comes through too.

[Shona Masson] Does it? That's good

[Gregor] This isn't too sweet.

 [Shona Masson] That's good.

[Gregor] And they look lovely.

[Shona Masson] Yes. I think they look really attractive.
