Gregor’s lemon and lime empire biscuits

[Gregor] We’re all know these wee biscuits. I make them with citrus flavours and for that, I’m going to start at the middle of the biscuits by making curd using lime. I’m first going to put 85g of butter in a bowl. We want a bowl that will go on top of a pan with boiling water. Also, 225g of sugar and I have the rind of three limes here, in with it.

[Gregor] With it, the juice from three limes as well. I’ll now put this on top of the pan at a low heat so that everything will melt together. I like the green colour from the lime, a very different colour for curd. That’s melted well now. And we only have to put the eggs in. I’m going to put two eggs into it, using the whole egg.

[Gregor] I’m just going to mix it for a minute or two, we want it to be more colder before I put the eggs in. We don’t want scrambled eggs at all. That’s not too hot at all. Just half a minute or similar mixing it, and we can then put it back on the heat so that it grows thick.

[Gregor] When the curd is thick, I’m lifting it up away from the heat. I have enough for two small jars. I’ll preserve half of it and I’ll keep the rest to fill the biscuits.

[Gregor] While the curd is now cooling, I’ll keep going with the biscuits. I’ll start with 150g of butter in a bowl and 50g of fine sugar, and a teaspoon of vanilla essence, and the rind of one lemon. It’s butter with salt that I’m using, making sure that there’s a good taste in the biscuits.

[Gregor] That’s mixed very well now and with that I’m adding 200g of plain flour. And mixing it again.

[Gregor] Here now then, it looks like breadcrumbs now but when I put my hands in everything will come together.

[Gregor] For eight double biscuits, I need to roll the dough out to quarter inches in thickness. I’ll cut 16 biscuits out of it, three inches across.

[Gregor] These are now ready to go in the oven at 160 fan for more than 10 minutes. We don’t want too much colour to be on them at all.

[Gregor] When the biscuits are ready, I spread them on a wire rack until they are cool.

[Gregor] It’s time now to fill the biscuits with our curd and also to coat with icing sugar and lemon to put on the top. And they will be good. Now, I’m just going to use a small spoon of the curd and I’m going to put it in the middle of the biscuit.

[Gregor] The biscuits are looking very thin when they’re by themselves but when you put another one on top, you’ll get a good bite.

[Gregor] They are all now filled and I only have to coat them with icing sugar and lemon juice. And it’s one lemon that I’m using and 100g of icing sugar.

[Gregor] Not every drop of juice will be needed, I’m putting it in carefully.

[Gregor] That looks good now, and you’ll see that it’s just running from our spoon. It’s not too soft. One spoon and going to put it in the middle of the biscuit, round the outside, and then I’m putting one of these small sweets, lemon ones. And that’s going on the top and then you know what’s inside it.

[Gregor] And I need to just try a piece now.

[Gregor] Oh well, those citrus flavours are coming through. That biscuit is so good, just right. Mmm and that curd is very good too, I got a tasty one there. It’s not only that they look pretty, but they are so tasty too.
