Venison sausages in red wine

English Beurla

[Roddy] Myself, Uisdean, and the yellow submarine made it back from Harris without falling out with each other again. We are good, aren't we?

[Uisdean] We are good again, aye.

[Roddy] We are ready to start cooking the sausages. If you start peeling those shallots.

[Uisdean] Aye.

[Roddy] Whilst Uisdean does that, I am going to start frying the sausages.

[Uisdean] This is a rotten task.

[Roddy] It is a rotten task. You deserve it after the slagging that you gave me earlier.

[Uisdean] How did you get to Harris anyway?

[Roddy] Och well that is another story. A weird guy appeared, I think that he was a surfer.

[Uisdean] One of those folk.

[Roddy] In a wreck of a white van ...

[Uisdean] Aye, aye.

[Roddy] ... with two surfboards on the roof. Anyway ...

[Uisdean] Was he one of those silver surfers? Is that ...?

[Roddy] He was. One of those crusty guys.

[Uisdean] Aye, aye.

[Roddy] Anyway, I will wait until this heats up. I think two spoonfuls of oil, olive oil, perhaps butter if you want.

[Roddy] And I only need to lightly brown these sausages and we are not putting holes in the skin, Uisdean.

[Uisdean] I never do that with sausage.

[Roddy] Not at all, no, no.

[Roddy] Especially with, this is intestine. It isn't, you know, something man-made.

[Uisdean] Aye. Aye.

[Roddy] This is the proper stuff so we want to keep the skin intact, and also when we cook it in the wine later it will keep everything inside.

[Uisdean] Aye.

[Roddy] Aye. It will be good.

[Roddy] These sausages are quite large.

[Uisdean] These sausages are quite small!

[Roddy] But I want to be really terribly careful with this. I need to watch it closely. I don't want them to stick and I don't want to damage the skin at all.

[Uisdean] And how long will this take? About the same time as I will take doing these onions, yes?

[Roddy] Just until they are brown, until the skin is a nice colour.

[Uisdean] Is it on top of the hob that you cook it or do you need the oven?

[Roddy] Well both. You can, this takes perhaps an hour altogether.

[Uisdean] So do these onions.

[Roddy] And you can put it in the oven at a reasonably low heat to finish it or leave it just simmering on the hob.

[Uisdean] Aye. The advantage of shallots over onions is that they are so easy to peel.

[Roddy] They are easy to peel. I am going to cut up a little pancetta just now.

[Uisdean] Aye.

[Roddy] So approximately two hundred grams of pancetta.

[Uisdean] You're very accurate.

[Roddy] A packet will do.

[Uisdean] Do you have enough shallots there now, Roddy?

[Roddy] Do them all.

[Uisdean] "Do them all". How many are left? One, two. Will I do that garlic too?

[Roddy] Aye. Crush two garlic cloves for me ...

[Uisdean] Two?

[Roddy] ... please.

[Roddy] Two.

[Uisdean] For the tip of your finger or are you going to cook with them?

[Uisdean] What use is two?

[Roddy] Just look at the colours of the sausages, the sausages, excuse me, now Uisdean.

[Uisdean] Bring them over so that I can see them.

[Roddy] They are just ... That is enough of that just now. If you use a slatted spoon like that you won't transfer much of their juices as it is into here that the onions that Uisdean is preparing just now are going.

[Uisdean] The onions are ready. They are, every one. Two cloves…

[Roddy] Two cloves enough, right?

[Uisdean] I start with a head of garlic. A clove of garlic is no use.

[Roddy] Shallots going in. Pancetta too.

[Uisdean] What are you doing with the wine?

[Roddy] Drinking it.

[Uisdean] Very good. I would like a glass too. I imagine that you are ...

[Roddy] No, the wine is very important. This is venison sausages cooked in red wine.

[Uisdean] And will you use the entire bottle?

[Roddy] Who knows. We will see. Sometimes I think more than half. Other times the whole bottle could do. Just depends on how the juices dry out. I don't use any stock. There is enough flavour from the sausages, mushrooms, the shallots.

[Uisdean] Aye.

[Roddy] Would you cut a little thyme for me?

[Uisdean] Oh right, aye, very good then.

[Roddy] Just breaking up the pieces of pancetta just now so that it goes brown and hard.

[Roddy] Usually any sort of mushroom will do - it is up to yourself. Sometimes it is easier if you get the little mushrooms, or the mushrooms, button mushrooms. These ones are a little bit bigger but I am just going to halve them but I will lightly wash them first.

[Uisdean] Here now. I hope that that is fine enough for you.

[Uisdean] Do you have enough thyme there?

[Roddy] I have enough time, mate, aye.

[Uisdean] Will that do you?

[Roddy] That is spot on.

[Uisdean] Very good.

[Roddy] That is just splendid.

[Uisdean] Do you want the garlic just now?

[Roddy] Just leave it there just now.

[Roddy] This is drying out a little more than I expected so I am going to throw a little bit of butter in. That will do. I am going to add flour here just now and this is the base of the juices that we will cook the sausages in.

[Uisdean] And there are three bay leaves here. Do you want to add the three?

[Roddy] Give me just the two. Just the two.

[Uisdean] Just the two.

[Roddy] I think if you have fresh bay leaves they are better, and also although I am using fresh thyme a spoonful of dry thyme that you get in the shop or that you have in the cupboard would perhaps do too. But if you have fresh bay leaves there are particularly tasty but unfortunately they weren't available but the dry ones will do just as well. The pancetta is browning a little. Do we have the flour, Uisdean?

[Uisdean] I will get it.

[Roddy] A spoonful.

[Uisdean] A spoonful.

[Roddy] Hurry up or this is going to burn.

[Roddy] Have you got the wine to hand there?

[Uisdean] I do. Yes. I was just looking at it.

[Uisdean] That is the wine opened. They don't fill the bottles. You must watch when you buy these bottles…

[Roddy] I know, eh. It is hot in here. Perhaps it is just ...

[Uisdean] Perhaps that is what it was. Yes.

[Uisdean] And does it matter what sort of wine you use?

[Roddy] I would say, no but if it isn't good enough to drink don't cook with it.

Venison sausages in red wine

[Roddy] No, the wine is very important. This is venison sausages cooked in red wine.

[Uisdean] And will you use the entire bottle?

[Roddy] Who knows. We will see. Sometimes I think more than half. Other times the whole bottle could do. Just depends on how the juices dry out. I don't use any stock. There is enough flavour from the sausages, mushrooms, the shallots.

[Uisdean] Aye.

[Roddy] Would you cut a little thyme for me?

[Uisdean] Oh right, aye, very good then.

[Roddy] Just breaking up the pieces of pancetta just now so that it goes brown and hard.

[Roddy] Usually any sort of mushroom will do - it is up to yourself. Sometimes it is easier if you get the little mushrooms, or the mushrooms, button mushrooms. These ones are a little bit bigger but I am just going to halve them but I will lightly wash them first.

[Uisdean] Here now. I hope that that is fine enough for you.

[Uisdean] Do you have enough thyme there?

[Roddy] I have enough time, mate, aye.

[Roddy] That is spot on.

[Roddy] This is drying out a little more than I expected so I am going to throw a little bit of butter in. That will do. I am going to add flour here just now and this is the base of the juices that we will cook the sausages in.

[Uisdean] And there are three bay leaves here. Do you want to add the three?

[Roddy] Give me just the two. Just the two.

[Roddy] I think if you have fresh bay leaves they are better, and also although I am using fresh thyme a spoonful of dry thyme that you get in the shop or that you have in the cupboard would perhaps do too. But if you have fresh bay leaves there are particularly tasty but unfortunately they weren't available but the dry ones will do just as well. The pancetta is browning a little. Do we have the flour, Uisdean?

[Uisdean] I will get it.

[Roddy] I know that you are fond of grape juice but I am going to add almost the entire bottle.

[Roddy] So that is just coming to the boil just now ... so turn down the heat and just let it cook, just gently.

[Roddy] This is thickening. I just mix them here, just make sure that nothing is sticking to the bottom of the pan and that the thyme, garlic, the bay leaf and everything that we have added is getting a proper mix.

[Uisdean] Will you fair leave it now for a while?

[Roddy] Half an hour. When the mushrooms go in, half an hour.

[Roddy] How is the wine?

[Uisdean] It isn't good when you're cooking with wine if you don't burn off all traces of the alcohol.

[Roddy] Oh you must keep a little bit.

[Uisdean] Aye.

[Roddy] Keep a little bit or you lose the essence then.

[Uisdean] Yes.

[Roddy] If you keep going like that

[Uisdean] This is a good espresso.

[Roddy] It is, so I believe.

[Roddy] Ok, I am throwing the mushrooms in now, and things are at a good stage. Well there are two ways to finish this now, Uisdean. We can just keep going ...

[Roddy] ... on the heat, but you could also put it in the oven for the required 20 minutes or half an hour and I am going to do that today because there are lots of juices in the pan and also I am worried about this pan. I burnt it the last time that I used it and I am worried that maybe ...

[Roddy] ... the stuff on the bottom will stick so I am going to put it in the oven.

[Roddy] To go with our venison sausages that we are cooking in red wine, we are going to make champ. Uisdean, you can cut this for me.

[Uisdean] The scallions.

[Roddy] The scallions, aye. The green bits, they are the most important.

[Uisdean] What is champ then?

[Roddy] It is just mashed potato with scallions cooked in milk and combined with the potato.

[Uisdean] Aye, aye.

[Roddy] I am going to add a little butter to the potato and mash it on the table. We need to do this quickly because I suspect that the sausages that are in the oven are almost ready and I don't want any of the juices drying out.

[Uisdean] Do you want every one of these?

[Roddy] A fair amount of it. That will do.

[Roddy] I am going to add a little bit of pepper to this. I am not going to cook this for long at all. I am just going to let it boil and then I am going to combine it with the potato. I will look at how things are in the oven. Well, that looks good. I think that that is ready. So now the milk will combine with this and the onions. It is as well for me to throw it all in eh.
