[Màiri] Agus dè as fheàrr na crathadh beag siùcair fhad ’s a tha iad fhathast blàth?

Mairi's mince pies

English Beurla

[Mairi] Now apparently cold fingers are what is important for making good pastry. So my hands are reasonably cold. I have eight ounces of plain flour here and to that I am going to add lard, two ounces of lard, and two ounces of butter and just with my fingers and trying to lift the flour as high as possible I am just going to work the lard and the butter in together.

[Mairi] Everything is coming together a little now and therefore I am going to add just a little bit of salt, and as I want a sweet pastry, an ounce of caster sugar. Everything is mixed together now and I am ready to add a little bit of water and, again, cold water, as cold as possible. Two tablespoons of water but I’m just taking my time. A little drop at first. Now there is more work required here. If you were going to make mince pies in a hurry, many just buy pastry from the shop. It is quicker, it is easier and for those of us who work and don't have too much time why not choose pastry from the shop instead of your own pastry if you don't have time.

[Mairi] That has now come together just in a lump. Lots of flour.

[Mairi] Now, I had to add more than two tablespoons of water but you will see yourself when it comes together in a ball then you will recognise that there is enough water in it. There is and this is rolls out very well. I want six pieces using the biggest cutter. Then I want six small ones so that they go on top of them.

[Mairi] Mincemeat here. A full teaspoon, and again you can make your own mincemeat. I was quite lazy today and I didn't but this is the important bit.

[Mairi] Cutting a wee bit in them. And then I am just going to put a little coat of milk on top of each pie. Although we are afraid to make pastry like this, I have just shown you that it isn’t hard. There is nothing difficult about it. It is easy enough. Now this goes in the oven for half an hour.

[Mairi] And what better than a little sprinkling of sugar whilst they are still warm?
