What does Iain eat?

[Presenter] Iain Morrison left his career of 28 years in education in Lewis to do a three-year theology degree at Edinburgh Theological Seminary.

[Presenter] With his wife, Carmen, living in Lewis, Iain looks after himself in Livingston.

[Iain Morrison] Dinner time – I’m starving with hunger today. I am going to make an omelette for myself. My wife would not believe it, she thought that I would pretty much barely survive I think. They give us food in the college every day, that’s good. I take porridge in the morning before I leave and I get something in the college and, well, we’re still alive anyway.

[Iain Morrison] I live in Livingston. I look after the house as long as I am in college. It is good, we are beside a railway station, we are close to the motorway, it is comfortable here, a peaceful, quiet place and there is enough room to be working at a table when I can put a computer, that is really comfortable. You can’t see the sea from this house. I miss the sea. Just in front of my house, Loch Tuath is there and there are no views here, as there are at home.

[Presenter] Although Carmen is not with him, it is very easy for her to keep him right regarding the recipes.

[Presenter] We are like teenagers texting, you know? The phone, almost every day, and we use an app on the phone, myself, Carmen, the kids, nephews, niece and my brother-in-law, my sister-in-law, we talk to each other every day on that. So there we have a blue cheese, bacon and onion omelette and as yet it’s not burnt. The cheese has melted, it’s not stuck to the pan. This could be a success. Okay. And that is how we do that. And before we start, grace.
